Vermicelli noodle salad

From The Vegetarian Cookbook

A spicy noodle side dish that goes well with a variety of oriental mains.

  • One packet vermicelli noodles
  • 2 carrots, finely sliced
  • 1 stick of celery, finely chopped
  • 2 spring onions, finely sliced
  • a few slices of jalapeno pepper, to taste
  • 1 tsp soy sauce
  • 3 tsp dark vinegar
  • 3 tsp sugar
  • 2 tsp sesame oil
  • salt to taste

Cover noodles in boiling water and soak until soft, rinse in cold water.

Mix the salt, soy sauce, vinegar, sugar, sesame oil in a small bowl for dressing

Mix the remaining ingredients with the noodles in a salad bowl, add dressing and serve.
