Vegetarian oyster sauce

From The Vegetarian Cookbook

  • 300 ml cup soy sauce
  • 50g sugar
  • 200 ml sake (or sherry will do)
  • 1 green onion, finely chopped
  • 1 piece ginger, thinly sliced
  • 15 g cinnamon
  • 1 piece star anise
  • 15 g dried orange peel

Put everything into a saucepan bring to boil, and simmer for an hour. Refrigerate, use within 4 weeks
