Vegetable Pakora

From The Vegetarian Cookbook

  • 1 cup chickpea flour
  • 1/2 teaspoon ground coriander
  • salt to taste
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala
  • 2 cloves garlic
  • 3/4 cup water
  • oil for frying
  • handful cauliflower florets
  • 2 onions, sliced into rings

Sift the flour into a bowl. Add coriander, garam masala, salt (if desired), turmeric, chili. Crush the garlic and stir it in. Gradually add the water and mix to a smooth batter.

In a heavy pan, heat a couple of inches of oil to 375 degrees F. Batter the cauliflower and onions and deep fry, a few at a time, until golden brown. Drain excess oil and serve.
