Spinach And Parmesan Croquettes
From The Vegetarian Cookbook
- 1/4 cup onions, chopped
- 1 tbsp oil
- 1 cup cooked spinach
- 1 1/2 cups cooked rice
- 3/4 cups parmesan cheese
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/4 tsp black pepper
- 2 tsp lemon juice
- 3 eggs
- 2 cups fresh bread crumbs
- oil for frying
Sauté onions in oil until light golden and translucent. Combine all ingredients except 2 eggs, breadcrumbs and oil, then chill.
Beat the remaining eggs and roll croquettes in egg and then breadcrumbs. Fry, turning so all sides brown to a golden color. Serve with Roasted Tomato Sauce.
