Spicy bean salsa
From The Vegetarian Cookbook
- 1 can black beans
- 1 can black-eyed peas
- 1 can sweetcorn
- 1 small red onion, finely chopped
- 1 small green sweet pepper, finely chopped
- 2-3 tbsp slices of jalapeno pepper
- 1/2 cup tinned chopped tomatoes, drained
- 1/4 tsp garlic salt
- 1 cup Italian dressing
Combine ingredients in a bowl, toss, cover and refrigerate overnight before serving.
