Spicy bean salsa

From The Vegetarian Cookbook

  • 1 can black beans
  • 1 can black-eyed peas
  • 1 can sweetcorn
  • 1 small red onion, finely chopped
  • 1 small green sweet pepper, finely chopped
  • 2-3 tbsp slices of jalapeno pepper
  • 1/2 cup tinned chopped tomatoes, drained
  • 1/4 tsp garlic salt
  • 1 cup Italian dressing

Combine ingredients in a bowl, toss, cover and refrigerate overnight before serving.
