Rice, Mushroom And Cheese Croquettes

- 1/4 cup onion, finely chopped
- 1 tbsp oil
- 1 cup mushrooms, finely chopped
- 2 cups cooked rice
- 3 tbsp celery, finely chopped
- 2 tbsp green bell pepper, finely chopped
- 1 tbsp carrots, grated
- 1/2 cup cheddar, grated
- 1 tbsp fresh parsley
- 1 tsp paprika
- salt and pepper to taste
- 2 tsp lemon juice
- 3 eggs
- 2 cups fresh bread crumbs
- a little oil
Sauté onions and mushrooms in oil until onions are translucent. Combine all ingredients except breadcrumbs and two of the eggs, and chill. Beat the remaining eggs, then shape the mixture into elongated balls and roll in the beaten egg, followed by the breadcrumbs to coat. Fry, turning so all sides are browned. Serve with white sauce.
