Potato and Onion Soup With Rocket

- 1 medium onion,roughly chopped
- 2 tbsp butter
- salt to taste
- 4 medium potatoes, peeled and diced
- 1 litre vegetable stock
- a bunch of rocket (arugala) chopped
- 1/2 cup cream
- 2 tsp extra virgin olive oil
- black pepper to taste
Melt the butter in a large pan and soften the onion with the salt over medium heat for about five minutes until transparent. Add the potatoes, stir briefly, then add the stock, bring to the boil and simmer until the potatoes are tender, about 15 minutes. Stir in the rocket, return to the boil, add cream, then remove from the heat when it just comes back to the boil. Serve with drizzle of olive oil and some pepper in each bowl.
