Omelette

The Basic Omelette, surprisingly easy to get wrong! Be careful not to overcook as the egg solidifies, for that fully texture you're looking for.

  • 2 large eggs
  • 1/2 tsp water
  • salt and pepper to taste
  • 1 tbsp clarified butter (or oil)

Mix together all ingredients except the butter. Put the butter in a heavy frying pan heated to medium and add the egg mixture.

Using a small spatula run around the edges of the pan, tipping the pan so the uncooked egg from the center can run under the cooked egg.

Continue to do this until the egg in the center is still just a little moist. Add filling now if desired. Roll the omelette with three folds as you turn it onto the plate.
