Honey Mustard Glazed Beets
From The Vegetarian Cookbook
- 1 1/2 pounds cooked beets, peeled and cut in to medium-sized chunks
- 3 tbsp butter
- 2 tsp mustard
- 1/4 tsp cinnamon
- 2 or 3 tbsp orange juice
- 3 tbsp honey
- salt and pepper to taste
In a saucepan, melt the butter, then add mustard, cinnamon, honey, orange juice, salt and pepper. Stir well. Add beets, toss well to coat in sauce, and heat through.
