Honey Mustard Glazed Beets

From The Vegetarian Cookbook

  • 1 1/2 pounds cooked beets, peeled and cut in to medium-sized chunks
  • 3 tbsp butter
  • 2 tsp mustard
  • 1/4 tsp cinnamon
  • 2 or 3 tbsp orange juice
  • 3 tbsp honey
  • salt and pepper to taste

In a saucepan, melt the butter, then add mustard, cinnamon, honey, orange juice, salt and pepper. Stir well. Add beets, toss well to coat in sauce, and heat through.
