Gratin Of Melting Potatoes

- 2 kg potatoes
- 2 cloves garlic, crushed
- 2 spring onions, trimmed and minced
- 2 tsp thyme, minced
- 1/2 tsp nutmeg
- salt to taste
- white pepper to taste
- 3 cups light cream
- 2 tsp butter
Preheat oven to 150ÂșC.
Peel, wash and thinly slice potatoes, rinse again. Stir together, in a bowl, garlic, spring onions, thyme, nutmeg, salt and pepper if desired.
Coat a large baking dish with butter. Put a layer of potatoes on the bottom of the dish and sprinkle with the spring onion & garlic mix. Repeat layers, finishing with a layer of potatoes. Pour in just enough cream to cover the potatoes. Cover the dish and set over very low heat for 20 minutes. Remove cover, dot with butter, and bake about 2 and a half hours until potatoes are tender. Serve hot.
