Ginger sponge pudding
From The Vegetarian Cookbook
- 225 g self-raising flour
- 100 g brown sugar
- 1 tbsp of ginger, peeled and grated
- 1 tsp baking powder
- 250 ml water
- 150 ml vegetable oil
- 2 tbsp syrup or maple syrup
Sift the dry ingredients into a stainless steel bowl. Stir in the water and oil and mix well. Add the syrup.
Cover with tinfoil, place in large pan with boiling water, cook for around 40 mins until done. Serve with rum custard or cream.
