Cheese Straws
From The Vegetarian Cookbook
- 1 cup cheddar cheese, grated
- 1 1/2 cups all-purpose flour, sifted
- 1 tsp salt
- 1/4 tsp mustard powder
- 50 g solid vegetable oil (shortening)
- 1 tsp paprika
- 4 tsp water
Preheat oven to 425°F/220°C
Mix flour, salt, and mustard. Add vegetable oil and mix until crumbly. Sprinkle over most of the water and mix until a doughy ball is formed (adding a little more water as needed.)
On a floured surface, roll out into a square about half a centimetre thich.
Spread a third of the cheese over half the dough, and sprinkle on the paprika. Fold over and seal edges. Roll out again, repeat the sprinkling and folding twice more. Roll out again and cut into strips, place on a baking sheet, and bake for around ten minutes until golden coloured and puffy.
