Baked apples

From The Vegetarian Cookbook

Excellent served hot with a little good-quality vanilla ice cream.

  • 4 large baking apples
  • 1/4 cup pecans, chopped
  • 1/4 cup raisins, roughly minced
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp butter
  • 3/4 cup boiling water

Preheat oven to 375ºF/190ºC

Wash apples. Waith a paring knife, remove the cores leaving 1/2 inch of the bottom of the apples, removing the seeds with a spoon if necessary and making the hole about an inch wide.

Mix the sugar, cinnamon, raisins, and pecans in a small bowl. Fill the apples with this mixture, place in a baking tin and dot with a little butter.

Add boiling water to the pan, and bake for up to 40 minutes until the apples are just tender. Serve hot.
