Baked Sweet Potato Fries
From The Vegetarian Cookbook
- 3 tbsp orange juice
- 2 tsp vegetable oil
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 large sweet potatoes, peeled and cut into strips 1/8-inch thick
Preheat your oven to 400°F/205°C.
In a small saucepan, boil the juice, oil, ginger, salt and pepper, then simmer for around two minutes until very slightly thick. Leave to cool, then toss with the potato strips to coat.
Arrange on a lightly coated baking sheet, and bake for about 30 minutes until crisp at the edges.
