Artichoke Frittata

From The Vegetarian Cookbook

  • 1 tbsp chopped garlic
  • 1 tsp olive oil
  • 1 14 oz can artichoke hearts, chopped
  • 6 eggs, beaten
  • 300 g muenster cheese grated
  • 1 tsp salt
  • 1 tbsp butter, chopped into small pieces

Preheat oven to 350°F/180°C.

Soften garlic in oil over medium heat. Add the artichoke hearts and saute 2 minutes. Add the eggs, cheese and salt, pour into a lightly greased oven-proof dish and hot with butter. Bake for 30-40 minutes, until top is just browned. Serve immediately.
