Artichoke Dip

From The Vegetarian Cookbook

  • 8 oz cream cheese
  • 1 cup mayonnaise
  • 14 oz can artichoke hearts, finely chopped
  • 2 spring onions, thinly sliced
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • a dash of hot pepper sauce
  • salt and pepper to taste

Preheat oven to 350°F/180°C.

Beat the cream cheese until smooth, then beat in the mayonnaise. Stir in the remaining ingredients. Spoon the mixture into an oven-proof dish and bake for around 35 minutes, until just golden. Serve hot with crudités, tortilla chips, bread sticks, or anything good for dipping!
