Aloo Muttar

From The Vegetarian Cookbook

  • 6 medium potatoes, chopped
  • 150g cooked green peas
  • 2 medium-large onions, chopped
  • 1 clove crushed garlic
  • 150g Jeera
  • 2-3 tbsp coconut
  • 2 fresh chillies, finely chopped
  • 1 tsp mustard seeds
  • a little sunflower oil
  • salt to taste
  • 1 tsp tamarind paste
  • 1 tsp grated ginger

In a heavy frying pan, cook the mustard and jeera with a little Oil. Add chopped Onion and fry until golden brown. Add garlic, potato, peas and fry for another moment. Add tamarind diluted in a little water and bring to boil, then simmer for 3 to 4 minutes.

While the mixture simmers, grind coconut, chilli and ginger into a fine paste, then add to the mixture with a little salt if desired. Simmer for a further 5 minutes, serve hot.
